Basil, Tomato and Mozzarella Pizza
With the promise of warmer weather on the way, I find myself returning to pizzas. This time I’m in the mood for a lighter pizza - just the sweetness of tomatoes and the fragrance of basil.
My kitchen smells like summer is already here.
Method
Serves 5-8
Pre-heat oven to 220c/200c Fan
You will need a large, thin baking tray.
Follow the Basic Bread Recipe to the point where you knock the air out of the dough.
Make the tomato sauce whilst the dough is rising and leave to cool.
Divide the dough into 4 for really big, thick pizzas, 6 for big thinner pizzas or 8 for small pizzas.
Use a floured rolling pin to roll out the dough.
Place the rolled out pizza dough on a baking tray. Ladle on a spoonful of tomato sauce, top with cheese and sprinkle over a pinch of black pepper.
Bake for 8-10 minutes on the top shelf of the oven, turning half way through.
Remove from the oven when the cheese is melted and the crust is light brown.
Leave to cool for a few minutes and then top with basil leaves and serve.

500g Mozzarella Cheese
Bunch of basil leaves
Freshly Ground Black Pepper
